Spiced Pear Butter

4 lbs Bartlett Pears: cored and diced (peeled)
1 Cup Dry White Wine
2 Tbsp Lemon Juice
1 ½ Cups Sugar
4 Slices Orange
1 Slice Lemon
4 Whole Cloves
1 Split Vanilla Bean and Cinnamon Stick

Combine pears, lemon juice and wine in a heavy 6 quart pot. Cover and simmer for 25 minutes or until pears are tender. Puree mixture and return to pot. Add remaining ingredients. (tie cloves, cinnamon and vanilla in a piece of cheesecloth, if desired.) Stir over low heat until sugar dissolves. Increase heat to medium-high and boil or 30-40 minutes until considerably thickened. (be careful, mixture splatters and will burn) Remove citrus slices (and cheesecloth bag.)  Ladle into sterilized jars, leaving ¼ head space, wipe rims, seal and boil for 7 minutes. Remove and let cool.
